Mountain bread is the secret ingredient behind this crunchy flavoursome snack.

Mountain bread, (cut in half vertically)

Chicken mince

Onion, finely chopped

Zucchini, grated

Carrot, grated

Red capsicum, finely chopped
1/2 of a whole
Frozen peas
1/2 cup
Reduced fat cheddar cheese, grated
1/2 cup
Salt reduced vegetable stock powder
1/4 teaspoon
Salt and pepper
To taste
Method
Preheat the oven to 200 degrees C.
Place a saucepan over medium heat and add the olive oil. Allow to heat for a minute and then add the onion and capsicum. Cook until soft.
Add the mince and stock powder to the pan, using a spoon to break up any lumps. Cook until mince is lightly browned and cooked through.
Add the rest of the vegetables and cook for a further 5 minutes. Remove from the heat and leave to cool for a few minutes. Add salt and pepper to taste.
Set out strips of mountain bread. Place a heaped tablespoon of the chicken and vegetable mix at the bottom left-hand corner of the bread. Sprinkle with a little cheese. Carefully fold the strip to form a triangle.
Place the triangles onto a baking tray lined with baking paper. Place in the oven and bake for approximately 15 minutes or until golden brown.
