Savoury Rice

A quick and easy pork and veggie-packed rice dish.

  • White rice, uncooked
  • 2 1/2 cups
  • Carrots, peeled and diced
  • 3 medium
  • Celery, diced
  • 3 stalks
  • Frozen peas
  • 3/4 cup
  • Onion, diced
  • 1 medium
  • Frozen corn
  • 3/4 cup
  • Pork mince
  • 500 grams
  • Olive oil
  • 3 tablespoons
  • Garlic, peeled and finely diced
  • 1 clove
  • Salt reduced chicken stock powder
  • 2 teaspoons
  • Salt reduced soy sauce
  • 1/4 cup
  • Pepper
  • to taste

Method

  1. Cook the rice according to the packet instructions. Refrigerate rice until cooled or ready to use.
  2. Put a frypan over medium heat and add the oil. Add the onion and garlic and cook for a minute or two, until the onion starts to look transparent.
  3. Add the pork mince and cook until evenly browned, mixing and breaking up any lumps that form with your spoon.
  4. Add the remaining vegetables and stock powder and cook until they start to slightly soften.
  5. Add the rice to the pan.
  6. Add the soy sauce and pepper to taste and mix well to combine.
