Crispy Veg Fritters

Crispy, golden and bursting with flavour, these fritters are the perfect snack or side dish.

  • Zucchini, grated
  • 1 ½ cups
  • Carrot, grated
  • 1 cup
  • Cauliflower, finely chopped
  • 1 cup
  • Frozen peas
  • ½ cup
  • Spring onions, finely sliced
  • 1/3 cup
  • Reduced fat cheddar cheese, grated
  • ½ cup
  • Garlic, peeled and crushed or finely diced
  • 10 grams (2 cloves)
  • Self raising flour
  • 2/3 cup
  • Eggs, lightly beaten
  • 2
  • Olive oil
  • 2 tablespoons
  • Salt and pepper
  • To taste
  • Greek yoghurt
  • For serving

Method

  1. Grate the zucchini and place on a clean tea towel. Gently wring the tea towel to squeeze out the excess liquid from the zucchini.
  2. Transfer the zucchini to a large bowl and add the carrot, cauliflower, frozen peas, spring onions, garlic and grated cheese and mix well.
  3. Sprinkle the flour over the vegetable mixture and add the beaten eggs. Mix until well combined.
  4. Season with salt and pepper, to taste.
  5. Place a large fry pan over a medium heat and add the olive oil.
  6. Using a ¼ cup measure, scoop the fritter mixture into the frypan. Flatten the mounds slightly, spacing them a few centimetres apart.
  7. Cook the fritters for 2 to 3 minutes. Turn them over and continue cooking for 1-2 minutes until they are golden brown and crispy.
  8. Serve with a dollop of Greek yoghurt.

Note: Fritters are a great way to use up any wilting vegetables or herbs in the bottom of your fridge. Note: Makes 10 fritters
